Pendant quatre ans, Nora Bouazzouni a recueilli des centaines de témoignages d'employés de la restauration. Tous dénoncent un système bien rodé, qui ne tient que par l’exploitation des travailleur·euses, et où nombre de chefs règnent par la terreur et réprimandent à coups d’insultes ou de torchon.
Malgré l’ampleur sidérante des abus, aucun n’a vraiment été inquiété. C’est que la « haute » cuisine, c’est la France, et la France, c’est la « haute » cuisine. Gare à qui osera s’y attaquer. Ce livre s’y emploie.

For nearly two centuries, this myth has justified the normalization of violence of all kinds—economic, physical, psychological, homophobic, racist, sexist, and sexual. It's no surprise that today 200,000 jobs in professional kitchens are vacant in France - there is a chilling gap between the facade of the restaurant, the dining room, and the kitchen. For four years, Nora Bouazzouni collected hundreds of testimonies from restaurant employees. They all denounce a well-oiled system, held together by the exploitation of workers, and where many chefs reign through terror, reprimand, insults and the dishcloth. Despite the staggering scale of the abuse, no one has really been prosecuted. "Haute" cuisine is France, and France is "haute" cuisine. Anyone who dares to tackle this subject be warned of backlash. This book does just that.

Elle a également participé à la création du podcast "Plan culinaire" et du programme court "Fine bouche", qu'elle écrit et anime. C’est aussi une militante féministe passionnée par le contenu de nos assiettes.
Nora Bouazzouni is a journalist for many French medias (France TV info, Libération, Slate, Le Fooding) and a translator. She took part in the creation of the podcast “Plan culinaire” (“culinary plans”) and presents the program “Fine Bouche” on youtube. She is also a food-lover and a feminist activist.
